Banana BreadIngredients:1/2 cup Vegetable shortening
1 1/4 cup sugar
2 eggs
5 overripe bananas (mashed)
2 cups all-purpose flour
1 teaspoon salt
2 teaspoons baking soda
2 tablespoons wheat germ
1 cup chopped nuts (optional)
Preheat oven to 350 degree F and grease two 8-1/2 inch loaf pans. Cream the shortening and the sugar in a large bowl. Add the eggs and bananas and blend well. In a seperate bowl sift the flour, salt, and baking soda and stir in the wheat germ and nuts if desired. Add the dry ingredients to teh banana mixture and blend until just mixed. Pour the mixture in the prepared pans, dividing it evenly. Bake for 50 minutes or until the top springs back when gently pressed. Makes 2 loaves.
