With the weather turning colder I wanted to share one of my families favorite homemade ( and easy to make) soup recipes.
For the meatballs you will need:
1lb Ground beef (can also use ground turkey)
1 egg
Bread (older is better.. it breaks into smaller crumbs)
1 Tablespoon basil, oregano, and rosemary(or Italian seasoning)
1/4 onion chopped fine. (chop fine so it does not break apart the meatballs)
1 teaspoon garlic (i love garlic)
1 teaspoon salt and pepper
Combine the ingredients and roll into small 1 inch balls. (think bite size)
Heat a pan on medium high with a tablespoon of oil.
Cook meatballs thoroughly. Roll them to sear all sides and sear the flavor inside. (it only takes a few minutes) can also cook them in the microwave.
For the remainder of the soup you will need:
Beef Broth
1 small bag of frozen spinach (can also use freah spinach but is more work)
1 Tablespoon garlic
The remainder of the onion (cut to preferred size)
1 cup Rice or barley (optional)
Cook meatballs first then add to the broth. Add all ingredients and let cook on medium to medium high for atleast 30 minutes. You can let simmer longer on lower temps.
