Ord gave me grief and said I needed to post this recipe! I know I have to make sure to have one on hand when he comes off diet on Christmas!

Mom's Applecake

2 eggs
1/2 c shortening
1c sugar
2 c flour
1 tsp baking soda
1/2 tsp nutmeg
1 tsp cinnamon
1/2 tsp salt
1 can pie sliced apples (you know, ready made pie filling - you can make your own too)
1 c nuts (optional)

Blend eggs, shortening and sugar until smooth
Sift together flour, baking soda, nutmeg, cinnamon and salt and add to egg blend, mixing until absorbed (mixture will be very firm)
fold in apples and nuts

Place in greased tube pan (loaf or bundt pan works just as well)

350 degrees for approximately 1 hour or until inserted pick comes out clean
