This is a delicious family recipe that is great to enjoy around the holidays.
(Especially around Halloween or Thanksgiving)
1 large can Pumpkin pureé
1 can condensed milk
1 cup of sugar
3 eggs
2 tsp. Pumpkin Pie Spice (optional)
2 tsp. cinnamon
2 cubes real butter (melted)
2 cups chopped walnuts
1 box yellow cake mix
Line a 13in. x 9in. pan with waxed paprer.
Mix the first six ingredients and pour into the pan.
Sprinkle the DRY cake mix over the top. (Do not pat down).
Sprinkle the walnuts over the top.
Melt the butter and drizzle over the top, sealing in all of the ingredients.
Bake at 350ºF for 45min. - 1 hour.
Let it cool completely. (You may even want to refrigerate it overnight).
Flip it upside down onto cookie sheet.
Peel wax paper off top.
Frost.
Frosting:
8 oz. cream cheese
½ cup powdered sugar
8 oz. tub of cool whip
Mix the cream cheese until it's smooth.
Add the powdered sugar.
Mix until smooth.
Fold in the cool whip 1/3 at a time.
Finally, cut the sheet into 1in. x 1in. squares and enjoy the yummy goodness.
